Keith and I are so grateful to have his brother’s family host us for the long weekend, we are heading North, to Norwich VT to celebrate his nephew’s birthday. But before we get on the road, I spent the morning baking up my famous (within my circle of friends) mini chocolate chip cookies.
Using the classic Nestle Toll House recipe, on the back of the bag, and King Arthur Flour (funny enough the headquarters are in Norwich). I spend a couple more hours making the mini morsels. Parchment paper is my best friend when it comes to this baking dedication, and I only cook the little guys for a quick 6 minutes.
Once the 100+ mini cookies are baked and cooled, I place them in my oh-so-handy cookie tin, that I purchased back in 2012. Keith, Howard and I set out on the road and arrive in VT just past dinner time. The kids (4 of them) are all in their jammies and anxiously awaiting Uncle Keith’s arrival. I pop open the tin and the kids indulge in a night time treat.
In the morning we set out for a brisk walk in the local town and take in the fantastic brick homes that run along South Main Street. Babe, can we move here someday!
